
Lemon Balm, Lemon Thyme, Lemon Verbena and Lemony Catnip
Not too long ago, most of our guests drank coffee in the morning and we rarely served tea, but that has changed. So many of our guests prefer tea that we decided to create some herbal tea mixtures from the herbs that we grow here on the farm. This photo shows our latest harvest of Sage, Thyme, Catnip, Mints, Calendula Flowers. We will dry them in our attic and then strip the leaves from the stems and put them indivually into sterilized, tightly covered jars to be used this winter. The Tea Recipes below are for a large ( about 6 cups) Teapot Calendula Tea 1/2 C Spearmint leaves 1/4 C dried Calendula blossoms 2 T. C Dried Thyme leaves 1 tsp black China Tea 3 whole cloves Steep 15 minutes in a preheated tea pot.
Strain and serve with lemon slices and honey Lemon Balm Tea 1/8 C lemon Balm leaves and stems 1/8 C Lemon Catnip leaves and stems 1/8 Cup Lemon Verbenna leaves dried 1/8 Cup Lemon Thyme dried 1 T dried Lemon Peel Mint Tea Mix a ratio of 1 part Apple Mint, 1 part Spearmint, 1/4 Part Mountain Mint, 1 part crushed Catnip leaves, 1/4 part Chamomile Flowers together in a large jar.
Use 1/2 Cup of this mixture in a 6 cup teapot and steep for 15 minutes before straining. Enjoy!
